I love bruschetta any time of the year, but in the summer months it is a special treat with fresh tomatoes. If you are like me you like delicious bruschetta with its combination of crunchy french bread and fresh toppings, but until lately I never even considered making it at home. It was just a treat when eating out. With fresh tomatoes and basil in my garden bed I decided to see just how much I can simplify bruschetta and make it easy to put together at home. The result was easy bruschetta in 10 minutes.
Ingredients:
- French baguette
- butter
- garlic powder
- 1-2 roma tomatoes, diced
- 5-6 basil leaves, shredded
- balsamic glaze
- parmesan cheese, shredded
Slice the french baguette into about 1 inch pieces. Cover one side of the slices with a layer of butter and a sprinkle of garlic powder. Broil bread slices for 1-2 minutes, until crisp.
Layer remaining ingredients on top of the bread. First add diced tomatoes, then a sprinkle of shredded basil. After that add a light layer of balsamic glaze and then top with shredded parmesan cheese.
The result was a fresh and tasty bruschetta that can be put together in a flash.

Love bruschetta too, sometimes I toast it and then rub it with a clove of peeled garlic…the garlic melts into the toast and you can skip the butter or drizzle with evoo…so yum!
